The design brief for EAT Grill & Bar was to transform the nineteenth century building into a unique dining destination that embodied the essence of both London and New York. Originally a dance hall in the roaring 1920s, Finkernagel Ross combined vision with heritage as inspiration for the restaurant’s design. The aim was to create a dining experience unique to the location, as the heritage-listed building demanded a fine balance between preservation and infusing modern aesthetics. Works commenced amidst the challenges still posed by the pandemic, requiring greater flexibility in terms of financial management and coordinating the workforce.
The transformation into a culinary destination demanded meticulous integration of customised features while navigating buildings regulations. The outcome reflects a fusion of past and present, paying homage to its origins. The versatile layout, characterised by long banquettes and small tables, offers flexibility to adapt seating arrangements based on the size of groups, as well as ensuring optimal space utilisation and maximum foot fall. Additionally, the coffered ceiling design serves a dual purpose of aesthetic enhancement and practicality by concealing main ventilation ducts, organising the mechanical systems while adding a touch of sophistication.
